Considering the Discover it Miles card for a family vacation to Disney. I read that the points could be redeemed for hotel stays. Does this include Disney resorts? Also, will I be able to redeem points for free tickets from Continental Airlines, I believe they are called United now.

Yes, you can redeem miles against any travel expense. Travel expenses include such expenses as airline tickets, hotel rooms, car rentals, travel agents, online travel sites, and commuter transportation. To redeem miles you simply need to book your stay at Disney resort and then log in to your online account to redeem your miles. The same process is true for airline tickets, you just buy tickets with any airline and then go to your account to redeem miles.
